Chicken Fried Rice

Ingredients :

Sesame Oil            2 tbsp
Oil                    1 tbsp
Chopped Carrot            1 cup
Cooked Chicken Breast    1 cup
Green Peas                1 cup
Sliced Green Onions            2/3 cup
Garlic Cloves Minced                 2
Grated Ginger                1 tsp
Cold Cooked Rice            3 cup
Eggs                        2
Soya Sauce                2 tbsp
Salt                        1/2 tsp
Crushed Black Pepper            1/4 tsp

Method :
Heat both oils in a pan and  swirl to coat. Add carrot, chicken, peas, 1/2 cup onions, garlic, and ginger. Stir-fry 2 minutes or until onions are tender. Add rice; cook 3 minutes or until thoroughly heated, stirring occasionally. Push rice mixture to one side of pan, add eggs to opposite side of pan. Cook, without stirring first and then stir around quickly until eggs are scrambled. Stir in soya sauce, salt, and pepper. Sprinkle with remaining spring onions before serving.
