Foily chicken rice
Ingredients
Rice boiled ½ kg
Chicken boneless ½ kg cut into julienne
Ginger julienne 2 tbsp
Soya sauce 2 tbsp
Chili oil ¼ cup
Green chilies sliced 4
Carrots ½ cup thinly sliced
Capsicum 1 thinly sliced
Spring onion finely chopped 1 cup
Salt 1 tsp
White pepper ½ tsp
Chili sauce 2 tbsp
Ketchup ¼ cup
Corn flour 2 tbsp mixed in ¼ cup water
Method
Heat chili oil add ginger julienne, chicken julienne with all the seasonings and fry well, add 2 cups water, cover and cook till boiling, thickens with corn flour paste, fold in capsicum, carrot and green chili, take a large piece of foil, put half rice, spread chicken mixture, spring onion chopped, top with remaining rice, drizzle with 2 tbsp chili oil, wrap and bake for 20 minutes on 180 degree C, serve hot.
